As a kid, did you ever look at a food and just on looks, get stubborn, and say you are not eating something?

That was always me with beets, or as us Brits always call it “beetroot”.

I hated the idea of it and when I did eventually try it, as pickled beetroot, I thought it was okay, but it never really got me excited.

Which is unlike me because I am a vegetable junkie and can never normally get enough of them.

Then I tried cooking air fryer roasted beets and using the dehydrator on the air fryer for dried beet chips and I had found these two amazing ways that I could enjoy beets.

I am now excited when beetroot comes into season, and I am buying it by the kilo and getting excited when the air fryer beeps and tells me it is done.

Today I wanted to get you excited about beets and show you just how easy it is to make dehydrated beet chips.

Can You Dehydrate Beets?

Yes, you can and its so easy too. Its no more effort to dehydrate beets as it is to peel and slice any potato or vegetable for the air fryer.

Your dried beets are then a healthier alternative to potato chips.

Plus, by drying out your beets you are preserving them, and you can be enjoying them well after beetroot season.

Do I Have To Blanch Beets Before Dehydrating?

I often get asked do you have to cook beets before dehydrating and it’s a big fat NO. Beets are salt and pepper, sprayed with extra virgin olive oil and then dehydrated in the air fryer.

The beets are cooked at a very low temperature to dehydrate them and then they are ready for serving without any blanching or cooking.

Are Dehydrated Beets Good For You?

Yes, they are. It’s a much healthier option to potato chips and by making your own dried beets, you know exactly what ingredients are being added.

You can have these dried beet chips as your movie night snack, for school lunch boxes, for picnics, or for those times when you are stood in the pantry and want a snack, whilst you decide what to make for dinner.

How To Quickly Slice Beetroot?

I recommend that you use a mandolin (like this one) when slicing beet chips. As it is all about lots of identical thin slices and it’s hard to achieve with your own knives.

I also recommend that you do more beet slices than you need, that way you can discard the broken pieces of beets and the ends that are not of an equal size.

Ingredients For Dried Beets

Air Fryer OvenI recommend this air fryer oven for dehydrating fruit, and it is fantastic because there are three shelves, and you can do a small batch or a large batch of dried beets.

Storage – You need a plan of action of where you plan to keep your dried beets. You can keep it simple by using them to snack on straight away (yes I do that), use a zip loc bag (I prefer this one) or you can opt for traditional pantry containers (like this one).

Beets – You can use as many or as few beets to dehydrate. I find that 3 medium size beetroots fit well in the air fryer oven.

Spray – I recommend spraying your beets with extra virgin olive oil. This will stop the beets from getting too hard when they are cooked and improve their texture. You only need a small amount of oil and even with oil, they are not high calorie.

Seasoning – Think of your beet chips like potato chips. You can get all kinds of different flavours and you can do the same with this beet chips recipe. Keep it simple with just salt and pepper, or how about salt and vinegar?

That is, it! You probably think that are complicated ingredients and accessories to dehydrate beets in air fryer, but there isn’t. It is also a fantastic easy recipe for air fryer beginners.

How To Dehydrate Beets?

  • Prep. Peel and then use a mandolin to make thin consistent slices of your beetroot. Aim for a thin slice that will work well as beet chips.
  • Season. Next spray your beets with extra virgin olive oil and season with salt and pepper.
  • Air Fry. Place your beets onto the air fryer shelves and make sure they are spread out. Then air fry for 4 hours on 30c/85f.
  • Store. Remove from the air fryer and allow to cool before placing into your preferred storage container.

How Long Does It Take To Dehydrate Beets?

It takes JUST 4 hours to dehydrate beets and transform them into beet chips. Note that it would normally be quicker, but I found the beets were not very nice when I used a higher temperature.

I dropped the temperature down to 30c and the dried beets were amazing.

How To Use Dehydrated Beets?

I love to use my dehydrated beets as an alternative healthy snack. At times when I would normally reach for potato chips or some chocolate, I have dehydrated beets sat in my pantry.

I can grab some, have a snack and then leave the rest for later.

If you have kids, I highly recommend it as a snack for their packed lunch or for a snack at the beach or when travelling in the car.

What Can You Dehydrate?

There are lots of food you can dehydrate and it’s not just about beets.

In a nutshell you can do most fruits, vegetables, herbs, and flowers. There is also the option to dehydrate other foods such as marshmallows, potatoes, and beef jerky. Though, those are the dehydrated foods I think of first as there is so much choice.

  • Load your beetroot onto the mandolin and create thin consistent slices that are similar to potato chips.

  • Load your beetroot slices onto your air fryer oven shelves and spray with extra virgin olive oil and sprinkle with salt and pepper.

  • Place in the air fryer oven on the top shelf (or use all shelves) and air fry for 4 hours at 30c/85f. Allow to cool before transferring to storage containers for later.

Notes

Setting. Note that the Power Air Fryer Oven has a weird set up. You have to press fruit and then adjust the time up to 30c and then adjust the cook time.
