What do you do when you have leftover cheese, grapes, and bread from your baked brie cheeseboard?? Make crostini with balsamic roasted grapes and brie obviously! I toasted the slices of bread, added a slice of brie, balsamic roasted grapes, and toasted pecans. And then topped it with a drizzle of balsamic glaze, fresh thyme, and black pepper. And let me tell you, it is delicious!! There are so many amazing flavors working together and I could just talk about it all day!!

Ingredient Notes
- Brie- I love the flavor of brie with the roasted grapes but you could also use goat cheese or whipped ricotta!
- Pecans - I just love the added crunch on top! You can use toasted pecans or candied pecans! Toasted walnuts would also be
- Balsamic glaze - For the roasted grapes, I just use regular balsamic vinegar but on top I love to drizzle some balsamic glaze! It's totally optional but adds that extra tangy flavor.
How to Make Balsamic Roasted Grapes
Roasted grapes are super easy to make and SO good! I love eating them on this crostini with cheese or just snacking on by themselves!
- Preheat your oven to 400 degrees.
- Place the grapes in a shallow dish and drizzle with olive oil and balsamic vinegar. Then sprinkle on salt and pepper.
- Bake for 20 minutes or until the skin is slightly blistered.
How to Make Crostini
Place the slices of bread on a baking sheet and top with a slice of brie.
Then place in the oven under the broiler for about 5 minutes, or until just starting to toast and the cheese softens. Remove from oven.
Top each with a few roasted grapes and pecans and a drizzle of balsamic glaze. Season lightly with fresh cracked pepper and fresh thyme.

Ingredients
Roasted Grapes
- 2 cups red seedless grapes
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Crostini
- ½ French baguette
- 8 ounces brie, sliced
- 2 tablespoons toasted pecans
- 2 tablespoons balsamic glaze
- cracked black pepper
- fresh thyme

You can make as many or as few crostini as you wish. I usually make 2-4 per person.
