Overnight Layered Salad with Peas

Amish seven layer salad is an easy, make-ahead lettuce salad that is great to take with you for lunch at work, to a potluck, or a picnic. And, of course, you can serve it as a side with any meal.

This layered vegetable salad is an easy portable salad. It has the dressing already included and is typically refrigerated overnight. The dressing on the top seals in all the ingredients to keep them fresh.

Seven Layer Salad with Hard-Boiled Eggs

This crunchy head lettuce salad with hard-boiled eggs and bacon includes all the things that most of us really love in a salad. I mean, who doesn't love bacon, hard-boiled eggs, and cheese with a lettuce salad?

Not to mention that this salad is super easy-to-make, and you can put it together the day before your event.

And another plus is that you don't have to worry about carrying along a bottle of dressing. This Amish layered salad is already dressed and ready to eat. But don't worry, it doesn't affect the freshness of the lettuce. It's still crisp and crunchy.

Dressing for Layered Garden Salad

You can make the dressing for your layered salad with Miracle Whip or Mayo.

If you've followed me for any length of time, you'll know that I am usually a Miracle Whip person. Some salads, such as my Broccoli and Cauliflower Salad, just don't taste as good when made with Mayo. It's hard to achieve the same tangy flavor when you use Mayo instead of Miracle Whip.

However, other recipes, such as my Deviled Eggs Recipe or this Amish 7 layer salad, are good with either one. So, use whatever you have on hand.

7 Layer Amish Pea Salad in 9 x 13 pan

This simple lettuce salad looks pretty when it's layered into a wide-bottom salad bowl. Although you'll need to double the layers if you use a deep dish.

But my Amish mom always layered it into a 9 x 13" glass pan with a lid. It makes it easy to store in the fridge because you can set other stuff on top. And it's also easier to transport it in a 9x13".

Ingredients

  • 1 head iceberg lettuce (chopped or torn)
  • 1/2 - 1 c. celery (diced)
  • 4 - 5 hard-boiled eggs (diced)
  • 1 - 2 c. frozen peas
  • 1/4 - 1/2 c. green onions (diced)
  • 8 - 10 slices bacon (fried and crumbled)
  • 1 c. shredded cheddar cheese

Dressing:

  • 1 1/2 - 2 c. Miracle Whip or Mayo
  • 1 Tbsp. sugar
  • 1/4 tsp. salt

Instructions

  • Remove the first couple of leaves and the core from the head of lettuce. Chop the head of lettuce into bite-sized pieces and spread into the bottom of a 9 x 13" glass pan.

1 head iceberg lettuce (chopped or torn)

  • Layer the celery on top of the lettuce and continue to layer the vegetables, eggs, and bacon on top.

    1/2 - 1 c. celery (diced), 4 - 5 hard-boiled eggs (diced), 1 - 2 c. frozen peas, 1/4 - 1/2 c. green onions (diced), 8 - 10 slices bacon (fried and crumbled)

  • In a small bowl, mix the dressing ingredients until creamy. Spread this over the top of the bacon.

    1 1/2 - 2 c. Miracle Whip or Mayo, 1 Tbsp. sugar, 1/4 tsp. salt

  • Sprinkle the cheese over the top. Cover and refrigerate overnight.

    1 c. shredded cheddar cheese

  • Best if served within two or three days. Although, this salad will be good for up to a week.

Notes

Options: This salad is versatile, you can use Romaine instead of Iceberg. Add more or less of each ingredient. Substitute the green onions for chopped red onions.

And you could add a layer of halved baby tomatoes, or whatever other vegetables you desire.

This salad looks nice and can easily be layered into a salad bowl instead of a 9x13". However, if layering it into a bowl, you'll want to create two layers of each ingredient. So only layer half of each ingredient into the bowl, then start over with more layers.

You can either stir the salad just before serving or serve it as it is.

I made this salad almost two weeks ago and the and I used romaine lettuce and the lettuce is as fresh today as it was when it was first made. I made the dressing with miracle whip and you don't need the sugar because miracle whip is already sweet but if you already put the sugar in and it is to sweet put some apple cider vinegar in to cut some of the sweet and if it is too thick mix some olive oil to thin it out. It is truly delicious. I put cauliflower, peas, bacon, cheese and lettuce in mine. Absolutely fantastic.

Wow, I've never had any around longer than about 5 days. Didn't think it would seem fresh at two weeks. 🙂
