I say probably because I wouldn’t want to encourage being drunk in an environment surrounded by gas fires and kitchen knives. Nessy is not surprisingly, a pretty messy chef. And I hate cleaning up. Nessy also hates reading long recipes and always gets bored half way through. So here are my favorite recipes, so easy, you could make them while drunk (minus the knives and the gas flames etc).

1. Nutella Cookies

All you need is one egg, one cup of flour and one cup of that all important Nutella. Mix your ingredients together well in a mixing bowl (elbow grease) and then start shaping your cookies. Pop in the oven on a tray for just 5-10 minutes at 180C/ 350F, depending how soft you like them!

p.s. Add peanut butter, nuts or chocolate chips into the mix if you’re feeling really bad!

2. Best Bruschetta

Dice a large tomato and a small onion and mix together in a bowl. Season with a dash of oil and salt & pepper. Cut a baguette into relatively thin slices and warm in the oven. Spread a little butter on each, then add a tea spoon of pesto (key ingredient). Add the tomato and onion onto the slices and serve!

3. Chimichurri Sauce for Steak or Bread-dipping!

Chimichurri sauce is the most awesomest sauce on the planet. If you have not tried it, you have not lived.

If you have a blender or food processor, this is easy to do. If like me, you don’t, it can take a little longer but still not much brain power. So let’s assume you have a blender. Throw a bouquet of parsley (2 cups), 6 garlic cloves and a large onion (chop into smaller pieces first) and blend. In a serving bowl, mix this with 1 cup of olive oil, red wine vinegar to taste (about 3 tablespoons) and the juice of half a lemon. Stir well.

Serve with a nice piece of meat from the butcher (I like mine medium rare), grilled prawns or slice a baguette and serve on the side for dipping.

4. Caramelized Onion Tart with Tomate & Fromage!

Buy one of those ready made puff pastries (forget the rolling pin) available in most supermarkets. Unroll your puff pastry from the packet and lay in a glass or porcelain baking dish. The base of your tart will be your caramelized onions. Dice two onions and heat in a pan with butter until translucent. Add a tablespoon of brown sugar (white sugar is okay too), stir and then add two tablespoons of balsamic vinegar. Total cooking time 20-30 minutes.

While keeping an eye on the onions, slice two tomatoes as well as some mozzarella. When your onions look done, evenly spread them over the pastry. Lay out your tomato and mozzarella slices neatly over the onions. Now just sprinkle over a stronger cheese like a blue cheese for added flavor. Salt, pepper, drizzle oil and pop in the oven at 180C/390F for 20-25 minutes. Done.

5. Garlic Hummus Brocoli

Steam, boil, roast or grill brocoli and then toss it in some garlic hummus (which you bought in a packet from the supermarket)! Voila. Add lemon juice if you want and black pepper to taste.

6. A Fancy salad

Salads don’t require any cooking skills, but the more creative you get with your ingredients, the more you trick people into thinking you’re some kind of chef. Think fruit and cheese: peaches and feta cheese with proscuitto, mixed leaves and honey / pomegranate with spinach leaves and goats cheese / or apple slices with blue cheese and walnuts.

The possibilities are kind of endless. Nessy’s fool-proof dressing is always oil, a little red wine vinegar and dollop of french mustard.

7. Pesto Chicken Bake

Spread a 1/4 cup of pesto onto the base of a baking dish. Cut your chicken into cutlets and lay the strips ontop of the pesto. Season with salt and pepper. Then spread another 1/4 cup of the pesto on top of the chicken strips. Cover with aluminum foil and heat in the oven for 25-30 minutest at 190C/ 375F. Remove the aluminum foil, grate some mozzarella over the pesto chicken, heat for another five minutes and serve. Serve with rice to soak up all the yummy juice.

8. Baked Camembert with Baguette and Onion Jam

Buy a camembert cheese in wood packaging (available in supermarkets). Remove any plastic packaging but you can leave it in the wood encasing (or place it in an oven resistant serving dish). Pierce holes in the top of the cheese. Heat in the oven at 180C/ 350F for 20-25 minutes until oozy!

Serve with an onion jam (marmalade) on the side with crackers or bread to dip.

9. Mozarella and Pesto Poppers

You’ll need another ready made pastry roll from the supermarket, mozzarella, pesto and tomato sauce (homemade or from the jar). Cut out circles in the pastry dough (I used the rim of a standard drinking glass).In the center of each, place a very small piece of mozzarella cheese and 1/2 teaspoon of pesto, 1/2 teaspoon of tomato sauce.Pull all sides together and attach with two toothpicks.Place on a cookie sheet and bake 20-25 minutes, or until golden brown.

10. Raw Banana Ice Cream

Freeze some ripe bananas (best to do it the night before as it takes 6-8 hours). Pop the frozen bananas in the food processor and blend for about 5 minutes. And EAT!

Topping suggestions to add to the blender: strawberries, cherries, almonds, coconut, caramel sauce, chocolate sauce, nutella etc.
